Celebrate Ireland with these delicious brownies!
Sweet, creamy and rich with a hint of Guinness, these are totally irresistible and perfect for the Irish-themed commemorations.
Preheat oven to 180ºC. In a mixing bowl, mix together the Guinness, sugar, vegetable oil, vanilla extract and salt. Whisk in the eggs one at a time, followed by the cocoa powder and flour. Spray a 9 by 13 inch square oven tin with cooking oil and line with parchment so the excess hangs over the sides. Pour in the mixture batter and bake for 20 minutes. Allow to cool.
For the cheesecake mixture, beat the cream cheese on the high setting of a hand mixer. Add the cream and Baileys and beat. Add the sugar and salt and beat again until smooth. Pour onto the brownies and leave in the fridge overnight. Slice and garnish with a sprinkling of cocoa powder.
